Ingredients for 1 servings:

  • 200 g almond sticks or whole almonds
  • 200 g flour
  • 160 g brown sugar
  • 100 g candied lemon
  • 100 g candied orange peel
  • 50 g raisins
  • 2 packets of vanilla sugar
  • 1 tsp baking powder
  • ½ bottle of bitter almond flavor
  • 1 pinch of salt
  • 25 g butter
  • 2 eggs

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 15 minutes

If using whole almonds, place them in boiling water, pour them into a sieve, rinse with cold water, remove the skins, and let them dry overnight on a cloth. Place flour, sugar, baking powder, vanilla sugar, bitter almond flavoring, and salt on a floured work surface. Make a well, add the butter and eggs, and knead. The dough will be very sticky. Knead in the almonds. Shape the dough into a ball and chill for 30 minutes. Shape the dough into a 25cm long log and place it on a baking sheet lined with baking paper. Bake at 200°C (top/bottom heat) for 15 minutes, then let it cool. Then cut diagonally into pieces, place the cookies cut-side down back on the baking sheet, and toast for another 10 minutes at the same heat. Let cool and store in a sealed tin.
