Ingredients for 2 servings:

  • 2 Maultaschen
  • 100 g pasta, cooked from the day before
  • ½ onion(s)
  • some broccoli florets
  • 2 eggs
  • some ghee or cooking oil
  • some salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Quick leftover pan with Maultaschen and noodles

Cut the Maultaschen into small cubes. Dice the onion into larger cubes. Cut a few florets off the broccoli and cut these into very small pieces or florets again. Heat some ghee or oil in a large pan. First, add the noodles and Maultaschen pieces and let them brown a little. Add the onions and broccoli and fry everything slowly. The broccoli florets should still be firm to the bite. Pour two beaten eggs over them and let them set. Finally, season everything with salt. This leftover stir-fry can be easily varied by adding some grated cheese or mushrooms. The important thing is that the noodles and Maultaschen go together. Serve with a green salad or sweet and sour Chinese sauce, or even just ketchup.
