Apple Tartlets

Ingredients for 1 servings:

  • 2 apples
  • 2 eggs
  • 225 g yogurt, 1.5%
  • 50 g sugar
  • 1 packet of vanilla sugar
  • 50 g butter, semi-skimmed
  • 1 tsp baking powder
  • 100 g flour
  • 50 g starch flour

Working time approx. 25 minutes; Total time approx. 25 minutes

makes 6 tartlets

In a bowl, mix the flour with the cornstarch, 25g sugar, and baking powder. Add a little cold water and knead everything into a smooth dough. Divide the dough into 6 portions and place into well-greased tartlet cases, pressing down evenly. Bake the cases in a preheated oven at 200°C (top/bottom heat) or 175°C (fan oven) for a good 5 minutes. While the tartlets are baking, beat the yogurt with the softened butter, eggs, remaining sugar, and vanilla sugar in a bowl until everything forms a smooth cream. Core the apples and cut into thin slices. Fold 1 apple into the cream; it should therefore be finely diced or grated (be sure to squeeze out the juice if grating it). Spread the cream evenly among the pre-baked tartlets, top with the apple slices, and press them in lightly. Return the tarts to the oven and bake at 180°C (top/bottom heat) or 165°C (fan oven) for 15-20 minutes, until they are nicely browned. The sugar can easily be replaced with sweetener, and the flour with wholemeal flour.
