Ingredients for 4 servings:
- 100 ml milk
- 10 g yeast, fresh
- 200 g flour
- salt and pepper
- 50 g butter, soft
- 700 g onion(s)
- 2 tbsp oil, neutral
- 100 g diced ham
- 150 g sour cream, thickened
- 2 eggs
- ½ tsp caraway seeds, ground
- ½ tsp sugar
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 55 minutes
or double the amount for one baking tray
Heat the milk and sugar to lukewarm in the microwave. Crumble in the yeast and dissolve with a fork. Put the flour, a little salt, and the butter in a bowl. Add the yeast milk and knead everything into a smooth dough. Cover and let rise in a warm place for 45 minutes. Peel the onion and slice it into rings or finely grate it in a food processor. Heat the oil in a roasting pan. Fry the ham cubes and add the onion, and sauté everything for about 15 minutes until translucent. Season everything with pepper and salt, and let cool. Knead the dough again, then place it in a greased quiche dish and roll it out, pulling the edges up about 1 cm. Cover and let rise again for about 15 minutes. Mix the sour cream, eggs, 1 teaspoon of salt, and the caraway seeds. Pour the onion mixture onto the dough and pour the cream sauce over it. Preheat the oven: Electric oven: 200°C Fan oven: 175°C Gas mark 3. Baking time: 25-30 minutes. Serve with a cool Federweißer.
