Pancakes with quark filling

In a mixing bowl, whisk together the flour, salt, milk, and water. Add the eggs and whisk again. Let the batter rest for 20-30 minutes. Heat a little oil in a pan. Spread a thin layer of batter evenly over the bottom of the pan. Once the edges are golden brown, carefully flip the pancake with a spatula and cook the other side until golden brown. Before flipping the pancake, add a little more fat to the pan. Cook the remaining batter in the same way, stirring before each cooking. Mix the quark with the egg, vanilla sugar, and raisins well and spread evenly over the pancakes, then roll each one up and serve. 75 kcal per serving.
