Quick spelt croissants

Ingredients for 1 servings:

  • 300 g spelt flour
  • 2 tbsp corn sugar or glucose
  • 1 tsp baking powder
  • 100 ml oil
  • ½ tsp salt
  • 100 ml milk
  • 125 g low-fat curd cheese
  • 1 egg white
  • 1 egg yolk
  • 2 tbsp milk
  • some seeds, e.g. poppy seeds, sesame seeds, pumpkin seeds, etc.

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Preheat the oven to 200°C (top heat) and line a baking sheet with parchment paper. Separate the egg and mix the egg yolk with 2 tablespoons of milk for brushing the croissants later. Set aside. Combine all remaining ingredients (except the seeds) in a mixing bowl and mix with a dough hook for 5 minutes until a smooth ball of dough forms. Transfer the dough to a lightly floured surface and, using a rolling pin, roll out into a flat circle. Carefully cut “cake slices” into the dough circle with a knife and roll the triangles, starting with the wide side, into a croissant shape, bending them slightly into a crescent shape. Place on the baking sheet, brush with the milk and egg yolk mixture, and sprinkle with the seed mixture if desired. Bake for 15 minutes and enjoy with savory or sweet toppings!
