Ingredients for 1 servings:
- 300 g carrot(s)
- 2 shallots
- 3 tbsp parsley
- e.g. salt and pepper
- 1 pinch of cinnamon
- 1 tbsp butter

Low-carb, from the Thermomix
Peel the carrots and shallots and chop them very finely. Sauté both in a pan with butter. Add the spices and herbs. Cover and cook for about 10-20 minutes, stirring occasionally. This depends entirely on the carrots, how finely or coarsely they are chopped and their water content. I always put everything in the Thermomix at 100 degrees Celsius with the lid on for 20 minutes on the mixing setting.
