Ingredients for 3 servings:
- 1 eggplant(s), diced
- 1 bell pepper(s), red, diced
- 1 zucchini, cut into strips
- 1 carrot(s), diced
- 2 tomatoes, diced
- 1 large onion(s), diced
- 3 garlic cloves, squeezed
- n. B. Salt
- n. B. Pfeffer
- e.g. chili powder
- e.g. paprika powder
- 1 tsp oregano
- oil
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes
Perfect and quick with guacamole as a side dish
Heat the oil in a pan. Sauté the onions and garlic, then add the vegetables and cook for about 5 to 10 minutes. Finally, season to taste. Fill tacos or tortillas with the mixture.
