Ingredients for 2 servings:
- 2 large chicken schnitzels
- 3 tbsp tomato paste
- 100 g flour
- 2 eggs
- 100 g breadcrumbs
- 150 g mozzarella, grated
- some salt and pepper
- e.g. oregano, basil, parsley, garlic
- lots of oil, e.g. rapeseed oil

Working time approx. 10 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 16 minutes
Crispy breaded with a savory cheese crust
Mix the breadcrumbs with the mozzarella and place in a deep plate. Optionally, add dried Italian spices such as oregano, basil, parsley, garlic, and pepper. Whisk the eggs in a deep plate. Also add the flour to a deep plate. Season the chicken schnitzels on both sides with salt and pepper, then spread the tomato paste evenly on both sides. First coat the schnitzels in the flour, then dip them in the beaten eggs, and finally coat them in the mozzarella breading. Press the breading down firmly. Fry the schnitzels in a non-stick pan in plenty of oil for about 2-3 minutes per side, depending on their thickness. Serve with mixed salad, wedges, fries, or ratatouille.
