Very moist lemon muffins with Giotto lemon core

Ingredients for 1 servings:

  • 120 g flour
  • 100 g butter
  • 100 g sugar
  • 2 eggs
  • 1 packet of vanilla sugar
  • ½ pack of baking powder
  • 1 lemon(s), zest and juice
  • 2 packs of confectionery (Giotto Lemon Summer Edition)
  • 100 g powdered sugar
  • 1 lemon(s), juice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Knead flour, butter, sugar, eggs, vanilla sugar, and baking powder into a dough. Grate the zest of one lemon and add it to the dough along with the lemon juice. Knead everything again. Now fill a small amount of batter into 10 muffin cups. Then place a Giotto lemon on top of the batter. Then pour more batter onto the Giottos so that the muffin tin is 3/4 full. Bake in a hot oven at 150°C (top/bottom heat) for approx. 20-25 minutes; insert a skewer to test if done. Mix together the icing sugar and the juice of one squeezed lemon. Spoon the icing onto the still-warm muffins.
