Lightning – Hazelnut Rolls a la Mäusle

Ingredients for 1 servings:

  • 250 g spelt flour, fine
  • 25 g hazelnuts, ground
  • 3 g dry yeast
  • 1 tsp salt
  • 1 packet of vanilla sugar
  • 150 ml water (maybe a little more)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

makes about 12 pieces

Preheat the oven to 200 degrees Celsius (top/bottom heat). Knead the ingredients into a slightly sticky dough. Immediately divide into 12 portions (about 1 tablespoon of dough per portion). Fold into rolls with lightly floured hands/fingers and place seam-down in muffin tins. Do not let rise! Bake the rolls at 180 degrees Celsius (350 degrees Fahrenheit) for about 25 minutes until lightly browned. Serve the cooled rolls with butter and smoked salmon.
