Tonka – Apple Muffins

Ingredients for 6 servings:

  • 70 g butter
  • 75 g sugar
  • ½ tonka bean(s), grated
  • 1 egg(s), size M
  • 170 g flour
  • 6 g baking powder
  • 8 tbsp cream
  • 1 apple, pitted and coarsely grated
  • Cake icing (sugar glaze or chocolate glaze)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Combine flour and baking powder. Lightly beat butter with sugar, egg, and tonka bean zest using a hand mixer. Then alternately stir in the flour mixture and cream. Finally, fold in the grated apple. Divide the mixture evenly among the muffin tins and bake in a preheated oven at 180°C for 20 minutes. Let the muffins cool and glaze if desired. Note: The tonka bean is the primary flavor. The apple is primarily there to prevent the muffins from becoming too dry.
