Ingredients for 1 servings:

  • 500 g low-fat curd cheese
  • 100 g almonds, ground
  • 100 g flaxseed meal
  • 6 eggs
  • 4 tbsp hemp seeds
  • 4 tbsp flaxseed flour
  • 1 tsp salt
  • 1 packet of baking powder

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 1 hour; Total time approx. 2 hours 10 minutes

Low-carb bread

First, combine the dry ingredients, then the low-fat quark and eggs in a bowl and mix with a mixer. Then pour into a loaf pan. Make sure the batter is evenly distributed, otherwise gaps will form in the bread. Let it rest for 30 minutes. In the meantime, preheat the oven to 180°C (convection oven). Then bake the bread for 60 minutes. Let the bread cool briefly, remove it from the pan, and let it rest for about another 10 minutes in the switched-off oven. Let it cool for at least another 20 minutes.
