Watermelon chutney

Ingredients for 1 servings:

  • 1 kg melon(s), pulp (net weight) of which (watermelon)
  • 2 chili peppers
  • 2 tsp curry powder
  • 25 g ginger
  • 1 m.-sized onion(s)
  • 1 shot of honey
  • 1 small can of tomatoes, chopped
  • 1 tbsp lemon peel
  • 3 tbsp lemon juice
  • 2 garlic cloves
  • a few stalks of parsley
  • some oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Finely dice the onion, chili peppers, and ginger. Thinly slice the garlic. Sauté everything in a pan with hot oil. Dice the melon flesh, not too finely (about 1 cm cubes), and sauté for 3 minutes. Season with salt, curry powder, and a generous dash of honey. Add the tomatoes, lemon zest, and juice, and simmer uncovered over medium heat for 10 minutes. Chop the parsley and mix in. While still hot, pour into jars with screw lids. It will keep well in the refrigerator.
