Ingredients for 1 servings:

  • 300 g flour
  • 100 g sugar
  • 1 packet of vanilla sugar
  • ½ pack of baking powder
  • 130 ml oil
  • 150 ml coconut milk
  • 20 ml pineapple juice, from the can
  • 2 tsp vinegar
  • 100 g pineapple pieces, from the can
  • some flour for processing
  • e.g. orange juice
  • e.g. powdered sugar
  • n. B. Pineapple pieces, dried, for decoration
  • Fat for the mold

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Open the pineapple can and collect the juice. Measure or weigh the juice and pieces. Combine the dry ingredients, then add the wet ingredients and stir lightly. Then mix everything into a smooth batter. Lightly coat the pineapple pieces in flour so the juice doesn’t run out as much during baking, then fold them into the batter. Pour everything into a greased loaf pan and bake at 180°C/fan for about 1 hour. Then let it cool. Mix enough orange juice with powdered sugar to create a spreadable glaze. Brush this over the cake and decorate with the dried pineapple.
