Smoked fish and potato patties with tomato and zucchini salad

Ingredients for 2 servings:

  • 8 potato cakes, already prepared, see instructions
  • 60 g smoked mackerel
  • 60 g smoked tuna
  • 1 large tomato(s)
  • 1 small zucchini
  • 40 g herb cream cheese
  • 1 bunch of chives
  • 15 g wasabi paste, more or less to taste
  • 1 tbsp lemon juice
  • Salt and pepper, from the mill
  • n. B. Herbal salt, from the mill

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

with mackerel, tuna and wasabi

Remove the bones from the mackerel and cut into pieces. Cut the tuna into thin strips. Cut the chives into small rings. Cut the tomatoes into eighths, remove the seeds, and cut into pieces. Cut the zucchini into small sticks. Mix the cream cheese with approximately 15g of wasabi paste (more or less depending on your preference), the lemon juice, half of the chives, salt, and pepper. Mix the tomato and zucchini pieces and season with herb salt and pepper. Spread each cooled potato patty with the cream cheese mixture and top one with mackerel and one with tuna. Add some more cream cheese, place another potato patty on top, and spread more cream cheese. Top with more mackerel and tuna. Sprinkle a few rings of chives on top. Add the remaining chives to the tomato and zucchini salad and stir in. Serve the rest of the cream cheese mixture in small bowls. This dish is perfect as a starter or a light supper. It can also be made with potato pancakes, but that tastes a bit different.
