Chocolate-Banana-Mango Muffins

Ingredients for 1 servings:

  • 50 g cocoa powder
  • 70 g sugar
  • 70 g brown sugar
  • 180 g flour
  • 70 g nuts or almonds, ground
  • 60 g chocolate, white or dark, chopped
  • 4 eggs
  • 120 g butter
  • 2 tbsp milk
  • 2 bananas
  • ½ mango(s)
  • 1 tbsp lemon juice

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

For a 12-cup muffin tray

Pour the cocoa powder into a glass. Layer the sugar, brown sugar, flour, nuts or almonds, and the chopped white or brown chocolate on top. I’ve had this mixture as a baking mix before. Combine the eggs with the butter. Add the baking mix and whisk everything well, adding a little milk to make it smoother. Peel the bananas and mash them with a fork, then drizzle with the lemon juice. Peel the mango and dice half the mango into small cubes. Fold the banana and mango into the batter. Butter and flour the cups of a 12-hole muffin tin, if desired, and fill them with the filling. Preheat the oven to 180°C (top/bottom heat) and bake the muffins on the middle rack for 20-25 minutes. Do the skewer test. Decorate with powdered sugar or icing, if desired.
