Ingredients for 1 servings:
- 150 g butter or margarine
- 100 g sugar
- 1 packet of vanilla sugar
- 3 eggs
- 100 g coconut flakes
- 85 g chocolate shavings
- 150 g flour
- 1 tsp baking powder
- 400 g pineapple from the can
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour
Drain the pineapple thoroughly and cut into small pieces. For the batter, beat the fat, sugar, and vanilla sugar until fluffy. Add the eggs one at a time, beating for 2 minutes each. Then fold in the coconut flakes and grated chocolate a spoonful at a time, followed by the flour and baking powder. Line a 26cm baking pan with baking paper and spread 2/3 of the batter into it. Place the prepared fruit on top, leaving a small border. Spread the remaining batter over the batter. Bake at 180°C (fan oven) for about 45 minutes.
