Simple spelt cookies

Ingredients for 1 servings:

  • 500 g spelt flour
  • 250 g butter, room temperature
  • 180 g agave syrup
  • 2 eggs
  • 2 packets of vanilla sugar
  • 2 pinches of salt
  • 2 pinches of baking powder
  • 2 tbsp rum

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours 40 minutes

Freeze dough rolls – bake fresh cookies anytime

Knead all ingredients in a food processor. Form the dough into approximately 10 rolls, each 3 cm in diameter. Place in the refrigerator for a few hours or freeze. Cut approximately 3 mm thick slices from the rolls. Place on a baking sheet lined with baking paper (a wire rack will also work if the trays are currently in use). Bake for approximately 10 minutes at 200 degrees Celsius. The edges of the cookies should just start to brown, then they’re done. I like to freeze the dough rolls. When I’m baking something else, I take the opportunity to quickly throw a tray of cookies in the oven—that way I always have something fresh to enjoy with my coffee.
