Ingredients for 1 servings:

  • 3 egg whites
  • 48 Confectionery (Toffifee)
  • 48 baking wafers, 50 mm
  • 40 g sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 32 minutes

Toffifee cookies, makes 48 pieces

First, the wafers are evenly distributed on a sheet of baking paper, leaving a few centimeters between each wafer. Next, the meringue is mixed. To do this, whisk the well-chilled and carefully separated egg whites until stiff peaks form. The peaks should be as stiff as possible. Finally, slowly add the sugar and whisk again until stiff peaks form. Then fill the piping bag with the meringue. Place a Toffifee in the center of each wafer, chocolate-side down. Then top each confection with a meringue cap. Bake for 12 minutes at 150°C (300°F) fan-assisted oven.
