Ingredients for 1 servings:

  • 200 g almonds, peeled, ground
  • 90 g sugar
  • 2 egg whites
  • 1 pinch of salt
  • 1 packet of vanilla sugar
  • 5 drops of bitter almond flavor
  • 2 tbsp powdered sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 20 minutes; Total time approx. 4 hours 40 minutes

Protein utilization

Beat the egg whites with a pinch of salt until frothy. Add half the sugar and the vanilla sugar and beat for a few more minutes until stiff, glossy peaks form. Fold in the almonds and the remaining sugar, a spoonful at a time, along with 5 drops of bitter almond oil. Using two small teaspoons, scoop out small heaps of dough and place them on baking sheets lined with baking paper. Dust the unbaked cookies with powdered sugar. Let dry at room temperature for about 3 hours. Bake in a preheated oven at 150°C for 20-25 minutes until light golden. Turn off the oven and let the amaretti cool with the door open.
