Ingredients for 1 servings:
- 50 elderflower heads
- 2 lemons
- 100 g citric acid
- 5 liters of water
- 5 kg sugar
- possibly lemon balm or
- mint
Instructions
Working time approx. 30 minutes; Rest time approx. 1 day 12 hours; Total time approx. 1 day 12 hours 30 minutes
Place the elderflower heads in a large container. Add the sliced lemons and citric acid. Pour in 5 liters of water and let stand for 24 hours in the sun or a warm place. Then stir in the 5 kg of sugar until dissolved and let stand for another 12 hours. Strain the syrup through a fine sieve or cheesecloth and bottle. For even more flavor, add a few sprigs of lemon balm or mint.
