Liqueur made from unripe walnuts

Ingredients for 1 servings:

  • 18 walnuts, unripe and still green (harvested in June)
  • 1,400 ml vodka or clear spirit with 40% alcohol
  • 1 stalk(s) cinnamon
  • 1 vanilla pod(s)
  • 5 juniper berries, slightly crushed
  • 4 grains allspice
  • 500 ml dry white wine
  • 450 g sugar

Instructions

Working time approx. 20 minutes; Rest period approx. 180 days; Total time approx. 180 days 20 minutes

Aperitif based on a recipe from France

In a large jar, combine the grated and quartered green nuts with the alcohol, cinnamon, vanilla pod, juniper berries, and allspice. Seal the jar and let it steep in a cool, dark place for 8 weeks. Filter. Then briefly boil the white wine with the sugar until the sugar has completely dissolved. Let cool. Mix the cooled wine-sugar syrup with the filtered nut extract, bottle, and let it rest for at least 4 months. A wonderfully spicy aperitif!
