Ingredients for 1 servings:

  • 50 elderflower heads
  • 2 lemons
  • 100 g citric acid
  • 5 liters of water
  • 5 kg sugar
  • possibly lemon balm or
  • mint

Instructions

Working time approx. 30 minutes; Rest time approx. 1 day 12 hours; Total time approx. 1 day 12 hours 30 minutes

Place the elderflower heads in a large container. Add the sliced ​​lemons and citric acid. Pour in 5 liters of water and let stand for 24 hours in the sun or a warm place. Then stir in the 5 kg of sugar until dissolved and let stand for another 12 hours. Strain the syrup through a fine sieve or cheesecloth and bottle. For even more flavor, add a few sprigs of lemon balm or mint.
