Ingredients for 1 servings:
- 225 g flour
- 4 eggs, separated
- 1 pinch of salt
- 175 g sugar
- 175 g butter or margarine
- 4 tbsp milk
- 2 tsp baking powder
- 3 apples (depending on size)
- 60 g flour
- 40 g sugar
- 50 g butter or margarine
- ½ tsp cinnamon

Grease a 26cm springform pan. First, make the crumble: place all ingredients in a bowl and knead into crumbles using either the dough hook of a mixer or your hands. Refrigerate. Beat the egg whites with the salt until stiff peaks form and set aside. Beat the egg yolks with the sugar, butter, and milk until fluffy. Mix the flour with the baking powder and fold in. Carefully fold in the beaten egg whites. Pour the batter into the springform pan and smooth it out. Preheat the oven to either 175°C (top and bottom heat) or 160°C (fan oven). Peel, core, and slice the apples. Spread these evenly over the batter, pressing in gently. Spread the prepared crumble topping over the apples. Bake the cake on the middle rack for about 55 minutes (baking time may vary from oven to oven). The crumble should be lightly browned. Let the cake cool in the pan. Sprinkle with powdered sugar before serving. It’s also delicious with other fruits.
