Vegan oat cookies with the Thermomix

Ingredients for 1 servings:

  • 100 g rice flour
  • 75 g corn flour
  • 1 tsp, leveled cream of tartar baking powder, gluten-free
  • 200 g oat flakes, gluten-free
  • 100 g brown sugar
  • 50 g white sugar
  • 60 g apple sauce, not too sweet, e.g. homemade
  • 160 g margarine (walnut)
  • 5 g vanilla sugar, brown, e.g. homemade
  • 1 pinch of salt
  • 1 tsp, leveled cinnamon powder

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 18 minutes; Total time approx. 23 minutes

Preheat the oven to 160°C fan/convection oven or 180°C conventional oven. The rice and corn flour should be very fine; if necessary, grind them again in the Thermomix for 30 seconds on speed 10. Add all ingredients, except the cinnamon, to the Thermomix. Knead for 3 minutes. Divide the dough in half, add the cinnamon to one half, and knead for 1 minute. Each half will yield approximately 12 large, 24 small, or approximately 40 mini cookies. Place them on a baking sheet lined with baking paper and bake for approximately 12-18 minutes.
