Fluffy apple and carrot muffins

Ingredients for 1 servings:

  • 200 g carrot(s), grated
  • 200 g apple, in small pieces
  • 300 g flour
  • 2 eggs
  • 100 g sugar
  • 100 g butter or margarine
  • 3 tsp baking powder
  • some salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

In a large bowl, combine the grated carrots and the apple pieces. Stir in the sugar. Then add the eggs and beat again. Sprinkle with a pinch of salt and stir in the softened butter using a dough hook. Mix the flour with the baking powder, sift, and gradually add to the apple and carrot mixture. Mix everything with a dough hook. Pour the batter into a 12-hole muffin tin and bake at 180 degrees Celsius for about 20 minutes. Tip: I don’t like the muffins quite so sweet, so I only use 100g of sugar.
