Shake gingerbread light and delicious

Ingredients for 1 servings:

  • 350 g flour
  • 300 g sugar
  • 150 g fruits, candied, chopped
  • 100 g hazelnuts, ground
  • 3 tsp gingerbread spice
  • 1 tsp clove(s), ground
  • 1 tbsp vanilla sugar
  • 1 packet of baking powder
  • ½ tsp cinnamon
  • 250 g milk
  • 150 g butter, liquid
  • 2 tbsp honey
  • 4 eggs
  • 250 g powdered sugar
  • 2 tbsp lemon juice, alternatively rum (as needed)
  • 3 tbsp water, hot
  • possibly grease for the tray

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Sheet cake

Place the flour, sugar, candied and chopped fruit (but this is not necessary), hazelnuts, gingerbread spice, clove powder, vanilla sugar, baking powder, and cinnamon in a large mixing bowl with a lid. Close the bowl and shake vigorously. Place the milk, melted butter, honey, and eggs in a mixing bowl and shake. Then add the wet ingredients to the dry ingredients in the large mixing bowl. Close the bowl again and shake well. Stir again with a spatula and spread onto a greased or parchment-lined baking sheet. Bake in a preheated oven at 200°C for approx. 20 minutes. Use the glaze ingredients to make either a lemon glaze or a rum glaze. After baking, spread the glaze over the cake and cut into squares, rectangles, or triangles while still warm.
