Ingredients for 1 servings:

  • 5 eggs
  • 80 g sugar
  • 90 g flour
  • 750 ml passion fruit juice
  • 2 packets of vanilla pudding powder
  • 1 can peach(s), reserve juice
  • 3 cups whipped cream
  • 1 packet of vanilla sugar
  • 1 packet of pudding powder (Aranka – Passion Fruit)

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Separate the eggs and beat the egg whites until stiff. Whisk the sugar and egg yolks until frothy and gradually stir in the flour. Fold in the stiffly beaten egg whites. Bake in an oven preheated to 180°C (top/bottom heat) for about 20 minutes on the middle rack. Make a pudding from the vanilla pudding powder and passion fruit juice. Drain the peaches, reserving the juice and finely chop the peaches. Add the sliced ​​peaches to the lukewarm pudding mixture. Spread the mixture on the sponge cake. Whip two cups of cream with vanilla sugar until stiff and spread on the peach mixture. Mix the reserved peach juice (200 ml) with the aranca passion fruit and drizzle over the cream. Garnish with cream.
