Ingredients for 1 servings:

  • 250 g flour
  • 200 g almonds, peeled, finely grated
  • 150 g powdered sugar
  • 200 g butter
  • 2 egg yolks or 1 egg
  • 1 packet of vanilla sugar
  • 200 g sugar
  • 1 vanilla pod(s)

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Vanilla crescents

Knead all ingredients, except the sugar and vanilla pod, into a shortcrust pastry and chill. Roll the dough into 1 cm thick strands. Cut into 8 cm long pieces and shape into croissants. Bake at moderate heat (approximately 150°C) for about 10 minutes until golden brown. Split the vanilla pod, mix the scraped seeds with the sugar in a bowl. Add the still-hot croissants and shake gently. The mixture should coat the croissants on all sides. Store in a tin.
