Ingredients for 1 servings:

  • 125 g butter
  • 50 g powdered sugar
  • 150 g flour
  • 100 g hazelnuts, ground or almonds
  • 2 tsp cinnamon
  • 1 pinch of clove(s) and cardamom
  • 1 tbsp cocoa powder
  • Jam, currant, raspberry or plum
  • powdered sugar

Working time approx. 45 minutes; Total time approx. 45 minutes

delicate Christmas biscuits, egg-free, makes about 25 pieces

Makes about 25 cookies. Beat butter with powdered sugar until creamy. Combine flour, nuts, and spices and gradually stir in to form a crumbly mixture. Gently knead the cookies together with your hands. Roll out between sheets of cling film to a thickness of about 3-4 mm. Cut out any shape you like, two of each. Cut a hole (of any shape) in the center of each cookie. Bake on baking paper at 200°C for about 10 minutes (they shouldn’t get too dark). While still hot, spread some jam on the cookies without the hole. Dust the “hole cookies” with powdered sugar and place them on the matching cookie with jam. Seal in cookie tins. The next day, they will be perfectly cooked and sooo tender…
