Ingredients for 4 servings:

  • 1.2 kg potato(s), waxy
  • 400 g carrot(s)
  • 2 stalk(s) leeks
  • 100 g ham, diced
  • 1 garlic clove(s)
  • some olive oil
  • Salt
  • pepper
  • 2 stalks of parsley

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Peel the potatoes and carrots and slice them thinly. Trim, wash, and slice the leeks. Peel and finely chop the garlic. Pour oil into a pan, add the garlic and carrots, and fry vigorously for 2-3 minutes. Now add the potato slices and ham cubes, mix well, and season generously with salt and pepper. Continue roasting for another 20-25 minutes (depending on the thickness of the slices). Five minutes before the end of the cooking time, stir in the leeks. Finely chop the parsley and sprinkle over the cooked fried potatoes.
