Ingredients for 1 servings:
- 4 egg whites
- 120 g powdered sugar
- 4 egg yolks
- 1 pack of pudding powder, vanilla
- Flour
- 1 pinch of cinnamon
- 1 pinch of baking powder
- 5 pieces of speculatius
- 1 m.-sized apple
- some lemon juice
- 1 cup whipped cream
- 1 packet of vanilla sugar
- 1 pack of vanilla paradise cream
- 1 tsp cinnamon
- Cranberries
- Brittle
Instructions
Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes
Beat egg whites with sugar until stiff, fold in egg yolks. Make up the vanilla pudding packets to 120g with flour, add a pinch of cinnamon and a pinch of baking powder and fold in. Finely crumble the speculatius biscuits and cut the apple into small cubes, mix with the lemon juice and stir in. Place in a springform pan. BAKING TIME: approx. 25-30 minutes at 200°C top/bottom heat. TO TOP: Beat the cranberries and whipped cream with 1 packet of vanilla sugar and 1 packet of vanilla paradise cream until stiff, then fold in 1 teaspoon of cinnamon and maybe a little cranberry jam. TO FINISH: Cover the baked sponge cake with cranberries and spread the whipped cream/cinnamon mixture on top. Decorate as desired with almond brittle and a little cinnamon powder.
