Apple cookies from the pan

Ingredients for 4 servings:

  • 1 kg apples (also windfall is suitable), peeled, pitted and sliced
  • 4 eggs
  • 1 tbsp baking powder
  • 10 tbsp flour
  • Sugar for sprinkling
  • Oil (sunflower oil) for frying
  • 1 pinch of cinnamon

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Apples, eggs, flour

Place the apple slices in a mixing bowl and mix with the eggs. Gradually add the flour until a pasty consistency surrounds the apples. Stir in the baking powder and cinnamon. Heat plenty of oil in a large pan. Pour 1 filled tablespoon of apple batter into the pan, forming a flat “cookie,” and fry slowly until light brown on both sides. Drain the baked apple cookies on a paper towel, sprinkle with sugar, and serve lukewarm. Delicious on their own or with vanilla sauce, for example. But they’re also delicious when cold—with hot cocoa or Yogi tea. Allow at least 4 apple cookies per person.
