- 200 g butter, soft
- 200 g sugar
- 1 packet of vanilla sugar
- 1 pinch of salt
- 2 eggs
- 250 g flour
- ½ pack of baking powder
- 125 g oat flakes, wholegrain
- 50 g oat flakes, fine
- 175 g raisins
- 50 ml water or apple juice
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cook the raisins with the apple juice or water on the stovetop for about 10 minutes. Let cool and set aside. Beat the softened butter with the sugar, vanilla sugar, and a pinch of salt with a hand mixer for about 3-4 minutes until creamy. Then beat in the eggs, one at a time. Sift the flour and baking powder and mix well. Then add to the butter and sugar mixture and mix everything well. Finally, fold in the oats and raisins. Using a spoon, scoop out small heaps of dough and place them, leaving some space between them, on a baking sheet lined with baking paper. Bake in a preheated oven at 180°C (160°C fan-assisted oven) for about 10-12 minutes, until the edges are lightly browned. When the cookies are done, place them on a wire rack and let them cool completely.
