Ingredients for 1 servings:

  • 225 g cane sugar
  • 1 packet of vanilla sugar
  • 420 g flour
  • 1 tsp, heaped baking powder
  • ½ tsp salt
  • 25 g flaxseed, crushed
  • 100 g dark chocolate
  • 125 ml soy milk (soy drink)
  • 180 ml rapeseed oil

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

Combine all dry ingredients in a large bowl. Cut the chocolate into small pieces and add them. I recommend setting aside a handful to sprinkle on top of the cookies later. This way you’ll have lovely, large chocolate pieces on the cookies. Add the oil and soy milk and knead everything well. Then shape into a log and cut into slices about 1.5-2 cm thick. Place the slices on a baking sheet lined with baking paper and shape into a cookie. If prepared, sprinkle chocolate pieces on top. Bake at 180°C for about 10 minutes – be sure to remove while still soft and then let cool or harden. Tip: If you like, you can also mix in coconut flakes or something similar. I like to do this on my own, but the dough shouldn’t get too dry.
