Ingredients for 25 cookies: Beat the eggs, sugar, vanilla sugar, and aniseed in a bowl until frothy and the sugar has completely dissolved into a thick, white, creamy mixture. This is best done using the whisk attachment on an electric hand mixer. Mix the flour with the baking powder, sift it over the foam, and fold it in with a wooden spoon. Line a baking tray with baking paper. Fill a piping bag with the batter and pipe 25 small mounds onto the baking tray. Leave the mounds of batter to rest in a warm place for 12 hours so that a fine white film can form on the surface. Preheat the oven to 150°C (300°F). Bake the cookies on the middle rack of the preheated oven for 35 minutes until they are very lightly browned. This creates the >feet> that are so typical of aniseed cookies.
