Meatballs with peppers and pineapple

Ingredients for 4 servings:

  • 1 small onion(s)
  • 500 g minced beef
  • 1 bread roll, soaked, squeezed
  • 1 egg(s)
  • salt and pepper
  • 3 bell peppers, yellow
  • 1 bell pepper(s), red
  • 3 tbsp oil, neutral
  • 2 tbsp soy sauce
  • 100 ml pineapple juice (from the can)
  • 2 slices of pineapple
  • 250 ml chicken stock
  • 2 tbsp balsamic vinegar, white
  • 1 tsp, heaped cornstarch

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Asian-inspired, popular with children

Sauté the onion in a little oil, mix with the minced meat and egg, stir in the bread roll evenly, and season well with salt and pepper. Shape the meat mixture into even balls; this works best with an ice cream scoop or a napkin ring. Brown the meatballs in oil, add the finely chopped vegetables, and fry briefly. Pour in the juice, stock, vinegar, and soy sauce; cover and cook for 10 minutes. Season to taste and add the diced pineapple. Mix in the cornstarch mixed with water, bring to a boil briefly, and serve with rice.
