Cranberry cookies

Ingredients for 1 servings:

  • 250 g butter
  • 200 g brown sugar
  • 100 g white sugar
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 2 eggs
  • 200 g flour
  • 150 g oat flakes (seeded)
  • 1 tsp cardamom
  • 1 tsp baking powder
  • 100 g cranberries, dried

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Makes 60 cookies. Cream the butter and sugar in a food processor until creamy. Add the eggs one at a time, then mix in the pinch of salt and cardamom powder. Mix the flour with the baking powder and oats and fold well into the batter. Finally, add the cranberries and mix well. Drop the batter in teaspoon-sized portions onto a baking sheet lined with parchment paper and bake at 160 degrees Celsius (320 degrees Fahrenheit) for about 12 minutes. Caution! Leave plenty of space between the cookies, as they will spread.
