Ingredients for 50 servings:

  • 250 g fat
  • 100 g powdered sugar
  • 1 packet of vanilla sugar
  • 250 g cornstarch (Mondamin)
  • 30 g cocoa powder
  • 1 pinch of gingerbread spice
  • 50 g flour
  • 150 g marzipan – raw mass
  • 75 g powdered sugar
  • 1 egg(s), including the yolk
  • 250 g powdered sugar
  • rum
  • Walnuts

Instructions

Working time approx. 45 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 45 minutes

Knead the fat, 100g powdered sugar, vanilla sugar, Mondamin, cocoa powder, 1 pinch of gingerbread spice, and about 50g flour with a dough hook. Cover and chill for 2 hours. Filling: Cut the marzipan into small pieces, mix with 75g powdered sugar and 1 egg yolk. Form each into a small dough ball, press down, and wrap a marzipan ball about half the size inside. Bake at 175°–200°C (160°C fan oven) for 15–20 minutes. Glaze: Mix 250g powdered sugar with a little rum to form a thick glaze. Place a thick dollop of the mixture onto the cookies with a knife and decorate with walnuts. This recipe makes about 2 baking sheets.
