Instructions
Working time approx. 1 hour; Total time approx. 1 hour
approx. 70 pieces
Whisk the eggs, sugar, and salt until light and creamy. Stir in the spices, cocoa, nuts, flour, and baking powder. Line a baking dish (approx. 35 x 20 centimeters) with baking paper and spread the batter into it. Preheat oven to 200 degrees Celsius (400 degrees Fahrenheit), bake the dominoes on the middle rack for 15 to 20 minutes. Turn the dominoes out onto a wire rack, remove the paper, and let cool. Cut the dominoes horizontally. Stir the jelly for the filling over low heat until liquid. Spread half of the jelly onto the bottom sheet of dough. Allow to dry. Knead the marzipan and rum with enough powdered sugar to make the mixture malleable. Roll out into a rectangle the size of the dough and place it on the jelly. Spread a thin layer of jelly over the marzipan layer and place the top sheet of dough on top. Trim any uneven edges. Cut the sheet into squares of approximately 3 centimeters (1.25 inches) using an electric knife. Place the cubes on a wire rack and spread a thin layer of jelly over them. Allow to dry. Melt cake icing or chocolate coating in a double boiler. Brush on the chocolate coating to coat the dominoes. Allow to dry thoroughly.
