Simple potato soup

Ingredients for 4 servings:

  • 500 g potatoes, raw
  • 1 bunch of soup greens, especially celery leaves
  • 300 g meat sausage or hunting sausage or other leftovers
  • 200 g smoked bacon
  • 1 large onion(s)
  • Salt
  • pepper
  • 1 liter of broth from cubes, or homemade from bones or similar.

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Boil the peeled potatoes with the vegetables. Meanwhile, make the broth. Dice the onions, bacon, and sausage. Sauté the sausage in a pan. When the potatoes are tender, drain them and reserve the cooking water. Using a hand blender, puree the potatoes, adding the broth and the sieved cooking water, until a slightly runny consistency is reached. Add the contents of the pan. Make sure there are enough sausage slices. Season with salt and pepper. Gently reheat the potato soup, being careful of the starch so it doesn’t become mush. Leftover meat or other sausage can also be used.
