Refreshing peppermint syrup

Ingredients for 1 servings:

  • 10 sprigs of fresh peppermint (choose strong varieties)
  • 1 liter of water, cold
  • 25 g citric acid
  • 700 g sugar

Instructions

Working time approx. 20 minutes; Rest period approx. 1 day; Total time approx. 1 day 20 minutes

A wonderfully refreshing syrup for hot days. Also great for children. It can also be used to make liqueur.

Mix the citric acid with the water in a large pot. Add the mint stalks to the water and let stand for about 24 hours. Bring to a boil, then strain. Heat the mint water again and dissolve the sugar in it. Simmer the sugar-mint water mixture for 5-10 minutes to intensify the flavor. Bottle while still hot and seal. Keeps for at least 6 months. Mixed with cold mineral water, the syrup makes a very refreshing drink for hot days. Also great for children. For liqueur: Mix the finished syrup with something else, such as fruit brandy. Season to taste with lemon, if desired.
