Ingredients for 1 servings:
- 500 g flour
- 150 ml milk, lukewarm
- 200 g natural yogurt
- 21 g yeast, fresh or
- 1 packet of dry yeast
- 1 tsp, heaped salt
- 50 g sugar

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes
Dissolve the yeast in a glass with half of the lukewarm milk, add the salt and mix well. Set the glass aside for a good 30 minutes. Then put all the remaining ingredients in a bowl, add the yeast, salt and milk and knead everything together very well. You should knead the dough vigorously for at least 5 minutes, 7-10 minutes is best. Now cover the dough and let it rest in a warm place for at least 1 1/2 hours. The dough can be a little sticky, but this is completely normal, so don’t add any more flour unless it is almost runny, which shouldn’t normally happen when using regular wheat flour. After it has rested, knead the dough again as well as possible. Now put the dough in a loaf pan or special bread pan and let it rise, covered, for another 30-45 minutes, until the bread has doubled in size. If you like, you can cut the surface a few times. After rising, place the pan in the preheated oven at 200°C (top/bottom heat). After about 5 minutes, reduce the temperature to 180°C (350°F) and bake for another 40 minutes. The bread shouldn’t get too brown; if it does, cover it with aluminum foil or reduce the temperature. Please note that every oven heats differently, so baking times may vary. This yogurt bread is very light and soft and stays fresh for a long time. The yogurt gives it a special touch! The bread can also be made entirely in a bread maker.
