Delicious beef soup

Ingredients for 4 servings:

  • 1 kg beef (from the neck)
  • 1 stalk(s) leek
  • 3 carrots
  • 2 onions
  • 1 piece(s) celery
  • 250 g noodles (soup noodles)
  • Parsley, fresh, chopped
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Chop the beef into small pieces and bring to a boil with water and two tablespoons of vinegar. Drain the water and briefly rinse the meat. Chop the vegetables and add them to about 2 liters of water along with the meat, seasoning to taste. Cook for about 40 minutes (on medium heat, tasting to check the vegetables are cooked) and add the noodles. Depending on your preference, add more or less noodles (we prefer a slightly thicker soup). Simmer for another 5-7 minutes, then sprinkle with fresh parsley and serve.
