Grandma's cheap, quick green spelt flour soup

Ingredients for 4 servings:

  • 200 g green spelt flour
  • 2 ½ liters of water, cold
  • 2 vegetable stock cubes or equivalent amount of vegetable stock powder

Instructions

Working time approx. 2 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 17 minutes

Stir the spelt flour into cold water, add the vegetable stock cube, and bring to a boil. Caution: Stir constantly to prevent it from sticking. Bring to a boil once, then let it simmer for a while and swell. The spelt flour will absorb water over time and swell, giving the soup a creamy consistency. If you’d like it more liquid, simply add more water. Tips: If desired, you can add marrow dumplings, for example, to the soup. I always refine the soup with a dash of cream. It looks great on the plate and, in my opinion, tastes even creamier that way.
