Ingredients for 1 servings:
- 25 g flaxseed meal
- 25 g sesame seeds
- 25 g oat flakes
- 25 g sunflower seeds
- 100 ml water, boiling
- 200 ml water
- 15 g fresh yeast
- 300 g spelt flour type 630
- 50 g wholemeal rye flour
- 2 tsp salt
- 2 tsp olive oil
- Flour for the work surface
- 1 tbsp grains as desired
Instructions
Working time approx. 30 minutes; Rest time approx. 3 hours 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 4 hours 20 minutes
without wheat flour, very fluffy, slightly longer preparation time, for approx. 6 – 8 sticks
Pour boiling water over the flaxseed meal, sesame seeds, oats, and sunflower seeds and let it swell for about 20 minutes. Add the swelled pieces to the remaining ingredients and knead for about 5 minutes until you have a slightly sticky dough. Cover and let it rest for about 2 hours. Place the dough on a floured work surface and divide into 6-8 equal pieces. Fold each piece several times and then shape into a ball. Cover and let it rest for about 30 minutes. Flatten the balls into an oval shape or roll them out and roll them up starting from the short side. Brush the sticks with a little water and sprinkle with seeds/grains as desired. Place the sticks on a baking sheet lined with baking paper, cover again, and let it rise for 20-30 minutes. During this time, preheat the oven to 230°C (top/bottom heat) and bake the sticks for about 30 minutes.
