Ingredients for 1 servings:

  • 2 large eggs
  • ¾ cup sugar
  • 1 cup banana(s), ripe, mashed (equivalent to 3 medium)
  • 0.33 cup buttermilk
  • 1 tbsp vegetable oil
  • 1 tbsp vanilla extract
  • ¼ cup flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • Fat for the mold
  • Flour or breadcrumbs for the mold

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Low-fat

Preheat the oven to 160°C (325°F). Lightly grease the baking pan and dust with flour or breadcrumbs. Beat the eggs and sugar in a large bowl with a mixer for about 5 minutes. Add the mashed bananas, buttermilk, oil, and vanilla extract. Sift the flour, baking powder, baking soda, and salt over the mixture and mix well. Pour the batter into the prepared pan and transfer to the oven. Bake the bread for about 1 hour (until the top is golden brown and a skewer inserted in the center comes out clean). Then remove the bread from the pan and let it cool. Note: Using a little less baking soda (about 1/4 tsp) and a little more baking powder will make the bread less moist—try it yourself. It tastes good on its own, but for those with a sweet tooth, I recommend a layer of Nutella.
