Simple whole wheat bread with sunflower seeds

Ingredients for 1 servings:

  • 400 g flour (whole wheat flour)
  • 100 g wheat bran
  • 100 g sunflower seeds
  • 20 g yeast (fresh) or
  • 1 pack of yeast (dry yeast)
  • 400 ml water (cold)
  • 2 tsp salt
  • 1 tbsp sugar or honey
  • Wheat bran, for shaping

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Dissolve the yeast, sugar, or honey, in cold water and let it rise for 10 minutes if using dry yeast. Then add the wholemeal wheat flour, bran, and salt and knead everything into a smooth dough. Finally, knead in the sunflower seeds. Let the bread dough rest for 30 minutes, then knead briefly again. Shape it into an oblong loaf and roll it in bran. Let it rise directly on the baking sheet or in a proving basket until it has doubled in size and make several diagonal cuts on the top. In the meantime, preheat the oven to 250°C (480°F). Place the loaf in the oven, reduce the temperature to 200°C (400°F), and bake for about 40-45 minutes. Then let it cool completely on a wire rack.
