Quick coconut cake from the tray

Ingredients for 1 servings:

  • 375 g wheat flour
  • 1 packet of baking powder
  • 300 g sugar
  • 2 eggs
  • 350 ml buttermilk (lemon flavor)
  • 150 g desiccated coconut
  • 100 g sugar
  • 2 cups of cream (200 ml each)
  • possibly grease for the tray

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

super tasty and quick to make

First, preheat the oven to 200 degrees Celsius (convection oven 180 degrees Celsius). Mix the flour with the baking powder and sift it into a bowl. Add the sugar, eggs, and buttermilk, and mix with a hand mixer until a smooth batter forms. Place the batter on a greased or parchment-lined baking sheet. Mix the desiccated coconut and sugar together and spread it on top. Bake for about 25-30 minutes. Place the baking sheet on a wire rack and pour the cold cream over the still-hot cake. Once cooled, cut the cake into slices.
